Back To School With Philly

It’s that time of year, back to send the kiddies back to school. Don’t send them out into the world hungry and empty handed. Make sure they have food that’s wholesome and filling. Check out these ideas with Philly for something that the kids are sure to love.

Tuna Twist
Tuna was always one of my favorite eats. Take the traditional tuna sandwich and twist it in a tortilla, add Philly Cream Cheese and viola! You have a new twist on an old classic.

Sandwich Puzzle
Jam and Philly make up a nice lunchtime sandwich. To make it a little more filling, why not add chunky peanut butter and jelly for a little bit of crunchy, a little bit of creamy and a little bit of sweet?

Turkey Tortilla Wrap
Philly Cream Cheese, salsa, and turkey are all wrapped up on this wrap that only takes 5 minutes to make. Send your child out into the world with this and they’ll be full enough to sail through their day.

Shortbread Cookies
Make these shortbread cookies ahead of time, and get the kids to help. It’s fun for everyone.

2 Tbsp. PHILADELPHIA Cream Cheese Spread
1 Tbsp. strawberry fruit spread
1 Tbsp. PLANTERS Dry Roasted Peanuts

SPREAD 1 bread slice with cream cheese spread. Spread remaining bread slice with fruit spread.

TOP cream cheese evenly with peanuts; cover with second bread slice. Cut diagonally into quarters.

Fish In Roasted Red Pepper Sauce

I love a good fish dish, and this definitely falls into that category. I would serve this fish on a bed of long grain white rice and couple it with a side of asparagus spears.

1 lb. cod fillets (4 fillets)
1/4 cup flour
1/4 cup KRAFT Zesty Italian Dressing
1/2 cup sliced onions
2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/4 cup roasted red peppers
1/4 cup chicken broth
1 clove garlic, peeled
2 Tbsp. chopped cilantro

COAT both sides of fish with flour; set aside. Heat dressing in large skillet on medium-high heat. Add onions; cook and stir until crisp-tender. Add fish; cook 5 to 7 min. on each side or until fish flakes easily with fork.

MEANWHILE, place cream cheese, red peppers, broth and garlic in blender container; cover. Blend until smooth. Spoon into medium saucepan. Bring to boil on medium-high heat. Reduce heat to low; simmer 5 min., stirring occasionally.

PLACE fish on serving platter; top with the cream cheese mixture. Sprinkle with cilantro.

It’s the weekend which means sleeping in. You roll over and look at the clock…noon. Looks like you slept a little too long. But before you jump out of bed in a panic of sleeping your day away, relax. Seafood is good anytime of day in my book. It’s even better when my first meal of the day is loaded with it. This quiche is great for brunch, with Philly and eggs, and crab.

C’mon, it has brunch built into the tittle. Of course it’s going to make the list. Brunch just wouldn’t be brunch without a sweet baked good. This would go great with a side of eggs and bacon and a flute of mimosa.

These pancakes are fluffy and just plain good. If you’re looking for ways to change them up try topping them with strawberries or even powdered sugar or whipped cream.

Breakfast Egg Burrito

SPREAD toast with cream cheese spread.

ARRANGE pear slices over cream cheese spread. Drizzle with syrup; sprinkle with walnuts.

SERVE immediately.

Lobster Bisque

Lobster Bisque is the perfect creamy summer seafood soup. It is easy to make, in only 20 minutes, and offers a that fresh from the sea taste, that makes you think of long days on the beach.

1/2 of a small onion, chopped (about 1/4 cup)
1 Tbsp. butter or margarine
1-1/2 cups milk
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed
1-1/2 cups chopped cooked lobster
1/4 tsp. salt
2 Tbsp. dry sherry

COOK and stir onion in butter in medium saucepan until tender.

ADD milk and cream cheese; cook until cream cheese is completely melted, stirring occasionally.

STIR in remaining ingredients; cook until heated through, stirring occasionally.

“Berry-Best” Ham Sandwich
This twist on the traditional ham sandwich serves up nicely with a piece of your favorite fresh fruit and a side salad for a well-rounded lunch.

Mini Broccoli & Ham Cups
These ham cups are great for a party. If you plan on serving them why not save yourself some time and assemble the appetizers several hours in advance, then cover and refrigerate. When you’re ready to serve pull them out the fridge and pop them into the oven.

Classic Ham Salad
The best thing about this recipe is the different flavor combinations. Enjoy it on top of crackers of cucumbers, salad or as a sandwich filling. Try out the variations on this dish for a slightly different twist every time.

Strawberry Pretzel Squares

Ripe strawberries, Cool Whip and Philly make up these squares. This recipe is just in time for summer, and super festive for the the upcoming Labor Day weekend.

20 servings, one square each
2 cups finely crushed pretzels
1/2 cup sugar, divided
2/3 cup butter or margarine, melted
1-1/2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
2 Tbsp. milk
1 cup thawed COOL WHIP Whipped Topping
2 cups boiling water
1 pkg. (8-serving size) JELL-O Brand Strawberry Flavor Gelatin
1-1/2 cups cold water
1 qt. (4 cups) strawberries, sliced

PREHEAT oven to 350°F. Mix pretzel crumbs, 1/4 cup of the sugar and the butter. Press onto bottom of 13×9-inch baking pan. Bake 10 min. Cool.

BEAT cream cheese, remaining 1/4 cup sugar and the milk until well blended. Gently stir in whipped topping. Spread over crust. Refrigerate until ready to use.

MEANWHILE, stir boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Stir in cold water. Refrigerate 1-1/2 hours or until thickened (spoon drawn through leaves definite impression). Stir in strawberries. Spoon over cream cheese layer. Refrigerate 3 hours or until firm. Cut into squares to serve. Store leftovers in refrigerator.
