Spiced Cranberry Dip

For variation, prepare as directed, omitting the red pepper and substituting hot pepper jelly for the orange marmalade.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened 
1/2 cup canned whole berry cranberry sauce 
1/4 cup orange marmalade 
1/8 tsp. ground red pepper (cayenne) 
1/4 cup PLANTERS Slivered Almonds, toasted 
 
Instructions

SPREAD cream cheese onto bottom of 9-inch pie plate. 

MIX cranberry sauce, orange marmalade and ground red pepper; spoon over cream cheese. Sprinkle with almonds. 

SERVE with RITZ Crackers.

Chocolate Mousse Torte

One element common in most tortes is their infamous sweet icing. Instead of the usual icing, this Chocolate Mousse Torte calls for JELL-O Chocolate Instant Pudding!  To get those fancy, bakery-like chocolate curls, just follow these easy steps:

Warm the chocolate square by microwaving it, unwrapped, on HIGH for a few seconds or just until you can smudge the chocolate with your thumb. Hold the square steadily and draw a vegetable peeler slowly over flat bottom of square, allowing a thin layer of chocolate to curl as it is peeled off the bottom of the square to make long, delicate curls.

37 NILLA Wafers, divided 
4 squares BAKER’S Semi-Sweet Chocolate, divided 
2 pkg. (3.9 oz. each) JELL-O Chocolate Instant Pudding 
2 cups plus 2 Tbsp. cold milk, divided 
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided 
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened 
1/4 cup sugar 
3/4 cup fresh raspberries 
 
Instructions

STAND 16 wafers around inside edge of 9-inch round pan lined with plastic wrap. Melt 3 chocolate squares as directed on package. 

BEAT pudding mixes and 2 cups milk in medium bowl with whisk 2 min. Add melted chocolate; mix well. Stir in 1 cup COOL WHIP; pour into prepared pan. 

BEAT cream cheese, sugar and remaining milk with mixer until well blended. Stir in 1 cup of the remaining COOL WHIP; spread over pudding. Top with remaining wafers. Refrigerate 3 hours. 

MEANWHILE, shave remaining chocolate square into curls. Invert torte onto plate. Remove pan and plastic wrap. Top torte with remaining COOL WHIP, berries and chocolate curls.

1 pkg. (19 to 21 oz.) brownie mix (13×9-inch pan size)

Instructions

HEAT oven to 350ºF.

PREPARE brownie batter as directed on package; spread into greased 13×9-inch pan. 

BEAT cream cheese with mixer until creamy. Add sugar, egg and vanilla; mix well. Drop by tablespoonfuls over brownie batter; swirl with knife. 

BAKE 35 to 40 min. or until cream cheese mixture is lightly browned. Cool completely before cutting to serve. Keep refrigerated.

Ingredients

2 Tbsp. MAXWELL HOUSE Instant Coffee 
1/4 cup boiling water 
32 Reduced Fat NILLA Wafers 
1 tub (8 oz.) PHILADELPHIA 1/3 Less Fat than Cream Cheese 
1/4 cup powdered sugar 
1 tub (8 oz.) COOL WHIP FREE Whipped Topping, thawed 
1 cup fresh raspberries 
1 tsp. unsweetened cocoa powder 
 
Instructions

STIR coffee granules into boiling water until dissolved. Cover bottom of 8-inch square dish with 16 wafers. Drizzle with 1 Tbsp. coffee. 

ADD 2 Tbsp. of the remaining coffee gradually to reduced-fat cream cheese in medium bowl, beating with whisk until blended. Add sugar; mix well. Stir in COOL WHIP; spoon half over wafers in dish. Cover with remaining wafers. Drizzle with remaining coffee; top with remaining cream cheese mixture. 

REFRIGERATE overnight. Top with raspberries just before serving; sprinkle with cocoa powder.

Instructions

PROCESS cookies in food processor until fine crumbs form. Transfer to medium bowl; mix in butter. Press onto bottom of 13×9-inch dish. Refrigerate until ready to use. 

WHISK cream cheese, sugar and 2 Tbsp. milk in medium bowl until blended. Stir in 1-1/4 cups COOL WHIP; spread over crust. 

BEAT pudding mixes and 3-1/4 cups milk with whisk 2 min.; pour over cream cheese layer. Let stand 5 min. or until thickened; cover with remaining COOL WHIP. Refrigerate 4 hours.

Ingredients

1/2 lb. medium-size pasta
4 slices OSCAR MAYER Bacon, chopped
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 cup frozen peas
3/4 cup milk
1/2 cup KRAFT Grated Parmesan Cheese
1/2 tsp. garlic powder

Instructions

COOK pasta as directed on package. Meanwhile, cook bacon in large skillet until crisp. Remove bacon from skillet with slotted spoon, reserving 2 Tbsp. drippings in skillet. Drain bacon on paper towels.

ADD remaining ingredients to reserved drippings; cook on low heat until cream cheese is melted and mixture is well blended and heated through.

DRAIN pasta; place in large bowl. Add cream cheese sauce and bacon; mix lightly.

20 Reduced Fat NILLA Wafers, finely crushed (about 3/4 cup)
1/2 cup flour
1/4 cup packed brown sugar
1/4 cup (1/2 stick) cold margarine
1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, softened
1 cup granulated sugar
2 eggs
2 Tbsp. flour
3 Tbsp. lemon zest, divided
1/4 cup fresh lemon juice
1/4 tsp. CALUMET Baking Powder
2 tsp. powdered sugar

Instructions

HEAT oven to 350ºF.

LINE 8-inch square pan with foil, with ends of foil extending over sides. Mix wafer crumbs, 1/2 cup flour and brown sugar in medium bowl. Cut in margarine with pastry blender or 2 knives until mixture resembles coarse crumbs; press onto bottom of prepared pan. Bake 15 min.

MEANWHILE, beat Neufchatel and granulated sugar with mixer until well blended. Add eggs and 2 Tbsp. flour; mix well. Blend in 1 Tbsp. lemon zest, lemon juice and baking powder; pour over crust.

BAKE 25 to 28 min. or until center is set. Cool completely. Refrigerate 2 hours. Sprinkle with powdered sugar and remaining lemon zest just before serving.

HEAT oven to 350°F.

HEAT large skillet spayed with cooking spray on medium heat. Add onions and garlic; cook and stir 2 min. Add chicken, 1/4 cup salsa, cream cheese, cilantro and cumin; mix well. Cook 5 min. or until heated through, stirring occasionally. Add 1/2 cup shredded cheese; mix well. 

SPOON about 1/3 cup chicken mixture down center of each tortilla; roll up. Place, seam-sides down, in 13×9-inch baking dish sprayed with cooking spray; top with remaining salsa and shredded cheese. 

BAKE 15 to 20 min. or until heated through.

Spaghetti a la Philly

This gorgeous plate of Spaghetti a la Philly definitely has a 5-star restaurant look to it! You’ll be surprised to learn that this pasta dish only requires five ingredients to make. For a special variation, thaw and drain 1 pkg. (10 oz.) of frozen chopped spinach. Add to browned meat with the spaghetti sauce and cream cheese.

BEAT cream cheese, 3/4 cup butter, granulated sugar and 2 tsp. vanilla in large bowl with mixer until well blended. Add flour and baking soda; mix well. Refrigerate 30 min. 

HEAT oven to 350°F. Press dough onto bottom of 15x10x1-inch pan. Bake 20 min. or until lightly browned. Meanwhile, melt remaining butter; pour into medium bowl. Add eggs, brown sugar, corn syrup and remaining vanilla; mix well. Stir in nuts. 

SPREAD nut mixture over warm crust. Bake 20 to 25 min. or until topping is firm around the edges but still slightly soft in the center. Cool completely.
