I can eat soup any day! Personally, I adore soups because they are fairly simple, yet they are full of flavor, at least this Creamy Chicken & Corn Soup is. So don’t wait until you’re feeling under the weather to try out this soup, you’ll want to savor this one right away!
1/4 cup KRAFT Zesty Italian Dressing
1 cup chopped onions (about 1 medium onion)
1 jalapeño pepper, finely chopped
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
1 pkg. Sazon adobo seasoning with saffron
1 can (14-3/4 oz.) cream-style corn
1 cup shredded cooked chicken
1 Tbsp. chopped fresh parsley
RITZ Crackers
|
|
HEAT dressing in medium saucepan on medium-high heat. Add onions and jalapenos; cook 5 min. or until tender, stirring frequently. Add cream cheese; cook until cream cheese is completely melted, stirring constantly.
ADD broth and adobo seasoning; stir until well blended. Add corn and chicken; stir. Reduce heat to medium-low; simmer 10 min. or until heated through, stirring occasionally.
SPRINKLE with parsley; serve with crackers.
